Easy, Gluten Free, Vegan Pancakes

These easy, peasy pancakes practically make themselves. They have a hint of sweetness and crazy good texture! Even those without allergies will be begging for seconds.  My-easy-to-use, gluten-free, vegan, top 8 free (except coconut), Pancake & Waffle Mix allows you to make perfect pancakes in no time, every time.

It’s all about texture when it comes to pancakes. These pancakes are light and fluffy, yet filling. Consider adding fruit or chocolate chips to the batter for a little pizzaz. Not into sweet? No worries. Try savory pancakes. Add onion, garlic, and a few choice spices. Have fun! Experiment.

Remember, pancakes aren’t just for breakfast. Pancakes are great for breakfast and lunch, too.

Making amazing gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, pancakes that taste great has never been so easy. I have taken the challenge out and put the simplicity in. Let’s get down to it…

Ingredients In addition to my Pancake & Waffle Mix, all you need are 4 basic ingredients.

  • Filtered water

  • Apple cider vinegar

  • Vanilla extract

  • Unsweetened applesauce

  • *Optional: chocolate chips or fresh fruit pieces

Instructions

Combine the wet ingredients in a bowl. Stir in the Pancake & Waffle Mix. Allow the batter to rest for a few minutes so that the flours absorb the liquid. Scoop onto a tabletop skillet or pan for pancakes or onto a waffle maker surface for waffles. Top with maple syrup, fresh fruit, or another delightful topping of your choice.

Easy, Gluten Free, Vegan Pancakes

Delightful pancakes with a hint of sweetness and the best texture, ever! Top them to your heart's delight with whatever suits your fancy.

Ingredients

  • Sweet Elizabeth's Organics Pancake & Waffle Mix, love already included
  • 2 cups water, filtered is best
  • 1 Tablespoon apple cider vinegar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • *optional chocolate chips or fresh fruit pieces

Instructions

  1. Preheat a large electric skillet or waffle iron to medium heat.
  2. In a large bowl, combine the water, vinegar, applesauce, and vanilla.
  3. Stir in Sweet Elizabeth's Organics Pancake & Waffle Mix until well combined.
  4. Allow the batter to rest for a few minutes while the flours absorb the liquid.
  5. Pancakes: scoop 1/4 cup of batter onto the skillet or pan, cook until air bubbles have popped. Flip, and cook for another few minutes.
  6. Waffles: scoop 1/2 cup of batter for each waffle.
  7. Top with your favorite toppings: real maple syrup, fresh fruit, seed butter, or whatever your heart desires.

Notes:

*Mix chocolate chips or fresh fruit pieces directly into the batter or drop them onto the waffles and pancakes when they first start cooking.
