Apple Cinnamon Coffee Cake

Hello, Sweet Friends!

Life as I knew it would never be the same. From a simple request by my nine-year-old daughter, everything changed in an instant.


Each of our kids gets to request all their homemade meals and desserts for their birthday. I start planning weeks in advance to make sure I can handle the requests. Sophia decided on a coffee cake for her birthday breakfast. Seriously I thought, what 9 year old even knows what a coffee cake is? I pleaded, even tried bargaining to get her to change her mind.

To let you in on a little secret, I’m crazy self-critical and competitive, I didn’t want to FAIL at the special birthday request. I knew I could easily throw together pancakes or muffins but “cake” was much more difficult since we were now gluten-free, dairy free and ate a healthier lifestyle.

We had taken a family vacation, one in which we actually enjoyed our time. We hiked, slept, played with the kids and explored. It was a glorious reset for all of us.

When you have time to step away from the daily shackles it provides you with an opportunity to connect with a side of yourself that often gets bulldozed by the daily demands.


We returned home two days before Sophia’s birthday so when it came to making the coffee cake I hadn’t even gone grocery shopping to restock the empty fridge and pantry. I tried one more desperate time to get Sophia to change her mind about it, but she stood her ground.

Once I looked at the lack of ingredients I became concerned for our taste buds. I reluctantly agreed to the coffee cake but made it clear that no matter how it turned out it still needed to be eaten.

I threw together a few ingredients I had on hand, put the coffee cake in the oven, and crossed my fingers. I honestly couldn’t believe it when it came out of the oven! Ha, it turned out! The image of the cinnamon apple coffee cake with pecan crumble, piping hot in the glass Pyrex is forever imprinted in my memory.

At the time, I was sharing my knowledge and skills through an organic produce co-op and cooking classes. I became giddy at the thought of sharing this new recipe with my next class. Fortunately, the lightbulb that people didn’t want my recipes any longer they just wanted me to make the food for them came on.

And, at that exact moment, early in the morning on January 2, 2017 Sweet Elizabeth’s was born.


I’m grateful to be able to share a simple way for you to put a delicious treat on your table!

1 can full fat coconut milk, healthy fats
1 teaspoon vanilla extract, the good stuff
1 tablespoon apple cider vinegar, with the mother 😉
1 apple, organic of course (whatever your favorite is, Pink Lady is mine)
1 tablespoon cinnamon
2 tablespoons coconut sugar
Optional Topping
1/2 cup chopped nuts or seeds (my favorite are pecans)
2 tablespoons coconut sugar
Optional Icing Recipe
2 tablespoons coconut milk
1/2 teaspoon vanilla extract
1/2-3/4 cups powdered sugar
1. Preheat oven to 350°.
2. Core apple and cut into bite size pieces, set aside.
3. Combine coconut milk, vanilla extract, apple cider vinegar and 1 bag Sweet Elizabeth’s Organics GF Coffee Cake Mix
in a bowl and whisk well.
4. Pour in apples and fold into batter with a spatula.
5. Pour into a 9×13 cake pan and sprinle with cinnamon and sugar. You can also add the optional topping at this time as well.
6. Bake at 350° for 18 minutes.
7. Allow to cool completely then drizzle with the optional icing.
