Easy, Gluten Free, Vegan, Snickerdoodle Cookies
Snickerdoodle cookies--a classic sugar cookie with a tiny bit of spice. These traditional cookies make the perfect complement to tea or coffee but can definitely hold their own as a dessert any time of the day. My-easy-to-use, gluten-free, vegan, top 8 free (except coconut), Vanilla Cake Mix allows you to make these cookies in minutes.
Snickerdoodle cookies—classic sugar cookies with a hint of warming cinnamon. So easy to make and so easy on the tastebuds. Before you know it, the entire batch will disappear, leaving behind lots of smiles and gratitude. For those of us with food allergies, finding a gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, snickerdoodle is like winning the lottery! Lucky us!
Ready to make some cookies? In addition to my Vanilla Cake Mix, all you need are 4 basic ingredients.
Ingredients
Full-fat coconut milk, healthy fats
Vanilla extract, the good stuff
Apple cider vinegar
Ground cinnamon, Saigon is my favorite
Instructions
Preheat oven to 350°.
Combine all ingredients in a bowl, and stir with a spatula until mixed well.
Make 12 dough balls of equal size.
Roll the dough balls in ground cinnamon.
Place the dough balls on a baking sheet lined with parchment paper.
Once you have them on the baking sheet, use the palm of your hand to flatten the cookies.
Bake at 350° for 10 minutes.

- 1/2 can full-fat coconut milk, healthy fats
- 1 teaspoon vanilla extract, the good stuff
- 1 Tablespoon apple cider vinegar
- 1/2 Tablespoon ground cinnamon, Saigon is my favorite
- *extra ground cinnamon for rolling the dough balls in
