Easy, Gluten Free, Vegan, Strawberry Muffins

These strawberry muffins scream “GOODNESS.”  So pretty.  So easy.  So delicious!  They are the perfect complement to breakfast and brunch or enjoyed on their own with a cup of tea.  My-easy-to-use, gluten-free, vegan, top 8 free (except coconut), Baking Mixes allow you to make incredible muffins in no time, every time. Use the Vanilla Cake Mix for a sweeter muffin or the Muffin Mix for a less sweet version.

Finally, an easy to use muffin mix for those of us with food allergies. These yummy, strawberry muffins are gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, and vegan. They are guaranteed to delight eaters of all stripes, not just those with allergies.

Do you like sweet muffins or crave a muffin with the sweetness of a scone? Either way, I have you covered. Use my Vanilla Cake Mix for sweeter muffins or my Muffin Mix for a less sweet option.

You will be amazed by the exceptional texture--cakey yet moist, even without the strawberries. Not in the mood for strawberries, try raspberries or blueberries. Customize to your heart’s content!

I have taken the challenge out and put the simplicity in! Let’s get down to it.

In addition to my baking mix (Vanilla Cake or Muffin), all you need are 4 basic ingredients.

  • Full fat coconut milk

  • Apple cider vinegar

  • Vanilla extract

  • Fresh strawberries, diced

Mix the coconut milk, apple cider vinegar, and vanilla extract, together until combined well. Add in Vanilla Cake or Muffin Mix. Gently fold in strawberry pieces. Scoop into muffin pan. Put these treats in the oven, and kick back while these beauties bake.

Instructions:

  1. Preheat oven to 350°.
  2. In a large bowl, stir the coconut milk, apple cider vinegar, and vanilla extract together until combined well.
  3. Add in cake or muffin mix.
  4. Gently fold in strawberry pieces.
  5. Scoop into muffin pan.
  6. Bake at 350° for 15-18 minutes.
  7. Cool completely before removing from muffin pan if not using paper liners.
