Easy, Gluten Free, Vegan, Strawberry Muffins

In addition to my baking mix (Vanilla Cake or Muffin), all you need are 4 basic ingredients.
Full fat coconut milk
Apple cider vinegar
Vanilla extract
Fresh strawberries, diced
Mix the coconut milk, apple cider vinegar, and vanilla extract, together until combined well. Add in Vanilla Cake or Muffin Mix. Gently fold in strawberry pieces. Scoop into muffin pan. Put these treats in the oven, and kick back while these beauties bake.

Easy, Gluten Free, Vegan Strawberry Muffins
Ingredients:
- 1 Sweet Elizabeth's Organics Vanilla Cake Mix (sweeter) OR Sweet Elizabeths Organics Muffin Mix (less sweet), love already included
- 1 can full fat coconut milk, healthy fats
- 1 Tablespoon apple cider vinegar
- 1 teaspoon vanilla extract, the good stuff
- 1 cup of fresh strawberries, diced
Instructions:
- Preheat oven to 350°.
- In a large bowl, stir the coconut milk, apple cider vinegar, and vanilla extract together until combined well.
- Add in cake or muffin mix.
- Gently fold in strawberry pieces.
- Scoop into muffin pan.
- Bake at 350° for 15-18 minutes.
- Cool completely before removing from muffin pan if not using paper liners.
