Easy, Gluten Free, Vegan, Apple Cinnamon, Coffee Cake

A birthday request from my then 9-year-old daughter sent me on a journey to create a gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, coffee cake. I told her we were going to eat it no matter how it turned out. Not only did it turn out, it became the recipe that would launch Sweet Elizabeth’s Organics baking mixes.
My coffee cake mix takes the challenge out and puts the simplicity in. It couldn’t be easier. Let’s get started…
Cake Ingredients and Instructions
In addition to my Coffee Cake Mix, all you need are 4 basic ingredients for the cake.
Full fat coconut milk
Apple cider vinegar
Vanilla extract
A fresh apple
Cut up the apple. Mix all the ingredients together in a bowl. Fold in the apples. Pour the batter into a greased or parchment-lined baking pan. Sprinkle sugar and cinnamon on top. Voila! Kick back and enjoy a cup of tea while you wait for the the deliciousness to come out of the oven.

Coconut sugar
Optional Topping Ingredients
Chopped nuts or seeds
Coconut sugar
Optional Icing Ingredients and Instructions
Coconut milk
Vanilla extract
Powdered sugar
Combine all ingredients in a bowl until mixed well. Vary the amount of coconut milk and powdered sugar to achieve the consistency that you like.

Ingredients
- 1 Sweet Elizabeth's Organics Coffee Cake Mix, love already included
- 1 can full fat coconut milk, healthy fats
- 1 teaspoon vanilla extract, the good stuff
- 1 Tablespoon apple cider vinegar
- 1 apple, organic of course (whatever is your favorite, mine is Pink Lady)
- 1 Tablespoon ground cinnamon, Saigon is my favorite
- 2 Tablespoons coconut sugar
- 1/2 cup chopped nuts or seeds (my favorite are pecans)
- 2 Tablespoons coconut sugar
- 1 Tablespoons coconut milk
- 1 teaspoon vanilla extract, the good stuff
- 1/2-3/4 cup powdered sugar
Instructions
- Preheat oven to 350°.
- Core apple and cut into bite size pieces. Set aside.
- Combine coconut milk, vanilla extract, apple cider vinegar, and Sweet Elizabeth's Organics Coffee Cake Mix in a bowl and stir well.
- Fold the apple pieces into the batter.
- Pour batter into a 9X13 cake pan, and sprinkle with cinnamon and sugar. You can add optional topping at this time if you choose to use it.
- Bake at 350° for 18 minutes.
- Allow to cool completely. Drizzle with optional icing.
