Gingerbread cookies with their spicy goodness fill a kitchen with such warmth and memories. For those of us with food allergies, finding a gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, gingerbread cookie that tastes like the ones from our youth seems like a fairytale. Look no more! Your search is over!

I have taken the challenge out and put the simplicity in. It couldn’t be easier. Let’s get started…

Ingredients and Instructions
In addition to my Vanilla Cake Mix, all you need are 7 basic ingredients.

  • Full fat coconut milk

  • Apple cider vinegar

  • Vanilla extract

  • Molasses

  • Ground ginger

  • Fresh ginger

  • Ground cinnamon

Mix all the ingredients together in a bowl, and voila! Drop spoonfuls onto a baking sheet lined with parchment paper, flatten each drop of dough with the palm of your hand. Then, sit back and enjoy the comforting and grounding scents of ginger and cinnamon as these precious goodies bake.

Easy, Gluten Free, Vegan, Gingerbread Cookies

These gingerbread cookies are perfect for the holidays but can be enjoyed anytime of the year. The sweet molasses and spicy ginger make such a great combo.
Prep time: 10 MinCook time: 10 MinTotal time: 20 Min

Ingredients:

  • 1 Sweet Elizabeth’s Organics Vanilla Cake Mix, love already included
  • 1/2 can full-fat coconut milk, healthy fats
  • 1 teaspoon vanilla extract, the good stuff 
  • 1 Tablespoon apple cider vinegar
  • 2 Tablespoons molasses
  • 1 teaspoon ground ginger
  • 1 inch grated fresh ginger, I love the combination of dried and fresh
  • 1/2 Tablespoon ground cinnamon, Saigon is my favorite

Instructions:

  1. Preheat oven to 350°.
  2. Combine all ingredients in a bowl, and stir with a spatula until mixed well.
  3. Drop spoonfuls or scoops (approximately 2 Tablespoons per cookie) onto a baking sheet lined with parchment paper.
  4. Once you have them on the baking sheet, use the palm of your hand to flatten the cookies.
  5. Bake at 350° for 10 minutes.
