Easy, Gluten Free, Vegan, Chocolate Chip Cookies
Great tasting, allergy-friendly, chocolate chip cookies that will please all the cookie monsters in your life. My-easy-to-use, gluten-free, vegan, top 8 free (except coconut), Vanilla Cake Mix allows you to bake scrumptious, moist, chocolate cookies in no time, every time.
There must be a million chocolate chip cookie recipes out there. For those of us with food allergies, finding a gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, chocolate chip cookie recipe is really difficult. On top of that, we want the cookies to taste incredible, too! You are in luck.
Never fear! I have taken the challenge out and put the simplicity in! It’s super easy. Let’s get started…
Ingredients and Instructions
In addition to my Vanilla Cake Mix, all you need are 4 basic ingredients.
Full fat coconut milk
Apple cider vinegar
Vanilla extract
Chocolate chips
Mix all the ingredients together in a bowl, and voila! Drop spoonfuls onto a baking sheet lined with parchment paper, and anticipate the delicious to come.

Easy, Gluten Free, Chocolate Chip Cookies
Ingredients:
- 1 Sweet Elizabeth's Organics Vanilla Baking Mix, love already included
- 1/2 can full fat coconut milk, healthy fats
- 1 teaspoon vanilla extract, the good stuff
- 1/2 cup chocolate chips +2 Tablespoons for topping
Instructions:
- Preheat oven to 350°.
- Combine all ingredients in a bowl, and stir with a spatula. Batter will be thick.
- Drop spoonfuls or scoops (approximately 2 Tablespoons per cookie) onto a baking sheet lined with parchment paper.
- Top each cookie with several chocolate chips.
- Bake at 350° for 10-12 minutes.
