Easy, Gluten Free, Vegan Brownies

Finally, an allergy-friendly brownie that tastes fantastic, requires few ingredients and even less fuss. Sprinkle the top with chocolate chips to raise the fudge meter even higher. My-easy-to-use, gluten-free, vegan, top 8 free (except coconut), Brownie Mix allows you to bake moist, chocolatey brownies in no time every time.

A great brownie recipe in your collection is a must. For those of us with food allergies, finding a gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, brownie recipe is super hard. Don’t worry. Your search is over. I have taken the challenge out and put the simplicity in! It’s a breeze. Let’s get started…

Ingredients and Instructions
In addition to my Brownie Mix, all you need are 4 basic ingredients. Actually three, if you don’t choose an add in. I always add chocolate chips to my brownies.

  • Unsweetened applesauce

  • Can of full fat coconut milk

  • Vanilla extract

  • Optional add ins: chocolate chips, seeds, nuts, dried fruit or coconut flakes

Mix all the ingredients together in a bowl, and voila! Pour the batter into a 9X13 greased or parchment-lined baking pan and wait for the magic to happen.

Easy, Gluten Free, Vegan Brownies

These brownies are full of chocolatey goodness. They are chewy, moist, and practically melt in your mouth.
Prep time: 10 MinCook time: 16 MinTotal time: 26 Min

Ingredients:

  • 1 Sweet Elizabeth's Organics Brownie Mix, love already included
  • 1/4 cup applesauce, organic with no sugar added, please
  • 1 can of full fat coconut milk, good fats
  • 1 Tablespoon vanilla extract, the good stuff
  • *Optional add-ins: mini chocolate chips, seeds, nuts, dried fruit, or coconut flakes

Instructions:

  1. Preheat oven to 350°.
  2. Combine applesauce, coconut milk, and vanilla in a large bowl.
  3. Add 1 Sweet Elizabeth's Organics Brownie Mix to contents in bowl.
  4. Stir with a spatula, batter will be thick.
  5. Stir in optional add-ins, if using.
  6. Pour batter into a 9X13 baking pan.
  7. Bake at 350° for 16-20 minutes until edges are done.

Notes
  1. Brownies will be soft when you remove them from the oven.  Allow them to cool completely before slicing.  For best results, refrigerate brownies for approximately two hours before slicing.
