Easy, Gluten Free, Vegan, Pumpkin Spice Doughnuts

No need to wait for autumn to enjoy these rich rings of pumpkin goodness. Pumpkin spice doughnuts are delicious no matter the season. These treats are gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, and vegan. Few ingredients and big flavor! Think pumpkin pie in a doughnut.
It is hard to believe how easy it is to make these tummy smiling treats. I have taken the challenge out and put the simplicity in! Let’s get down to it.
Doughnut Ingredients and Instructions
In addition to my Vanilla Baking Mix all you need are 8 basic ingredients.
Full fat coconut milk
Pumpkin puree (not pumpkin pie mix)
Apple cider vinegar
Vanilla extract
Ground cinnamon
Ground ginger (fresh if you have it)
Ground cloves
Ground nutmeg
Combine all ingredients in a bowl, and stir until mixed well. Scoop the batter into a doughnut pan. Sit back and enjoy the warm, spicy smells coming from your oven while these glorious goodies bake.
Optional Coating Ingredients and Instructions
Coconut sugar and cinnamon or powdered sugar
Cool completely before rolling in cinnamon and sugar or powdered sugar or drizzling with icing.
Optional Icing Ingredients and Instructions
Coconut milk
Vanilla extract
Powdered sugar
While the doughnuts are baking is a good time to make icing. Combine all ingredients in a bowl and mix well. Vary the amount of coconut milk and powdered sugar to achieve the consistency that you like.

Ingredients
- 1 Sweet Elizabeths Organics Vanilla Cake Mix, love already included
- 1 can full fat coconut milk, healthy fats
- 1/3 of a can of pumpkin puree (not pumpkin pie mix)
- 1 Tablespoon of apple cider vinegar
- 1 teaspoon vanilla extract, the good stuff
- 1/2 Tablespoon ground cinnamon, Saigon is my favorite
- 1/2 teaspoon ground ginger, you can use fresh if you have it
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- Coconut sugar and cinnamon
- Powdered sugar
- 2 Tablespoons coconut milk
- 1 teaspoon vanilla extract, the good stuff
- 1/2-3/4 cup powdered sugar
Instructions
- Preheat oven to 350°.
- Combine all ingredients in a bowl, and stir until mixed well.
- Scoop the batter into a doughnut pan.
- Bake at 350° for 12 minutes.
- Cool completely before rolling in cinnamon and sugar or powdered sugar or drizzling with icing.

- Combine all ingredients in a bowl until mixed well.
