Easy, Gluten Free, Vegan, Strawberry, Ice Cream Sandwiches
Velvety, strawberry ice cream tucked between two rich, vanilla cakes. These tantalizing treats are sure to produce smiles for miles. Finally, an easy recipe for both the sandwich and the ice cream parts of the ice cream sandwich. Yay! Finding an allergy-friendly ice cream sandwich that is both dairy free and gluten-free isn’t easy, until now. These scrumptious, strawberry ice cream sandwiches are gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, and vegan. Even those without allergies will fall hopelessly in love with these babies. Not in the mood for strawberry ice cream? Try raspberries, mangoes, or blueberries. The sky is the limit!
I have taken the challenge out and put the simplicity in! Let’s get down to it.
Sandwich Ingredients and Instructions
In addition to my Vanilla Cake Mix, all you need are 5 basic ingredients to make the sandwiches and the ice cream.
Full fat coconut milk
Apple cider vinegar
Vanilla extract
Line baking sheet with parchment paper. Mix coconut milk, apple cider vinegar, and vanilla extract in large bowl until combined well. Add Sweet Elizabeth's Organics Vanilla Cake Mix, and stir well. Drop 12 scoops of batter onto baking sheet to make individual sandwiches. You will need a top and a bottom for each of the six sandwiches. Now, you can make the ice cream while you wait for the sandwiches to come out of the oven and cool. Allow them to cool completely before assembly.
Ice Cream Ingredients and Instructions
Full fat coconut milk, healthy fats
Maple syrup
Vanilla extract, the good stuff
Frozen strawberries
Add all ingredients to the food processor. Pulse until the frozen strawberries break down. Once strawberries are broken down, allow the food processor to run until the ice cream is smooth. Store in an air tight container in the freezer until ready to assemble sandwiches.
Sandwich Assembly & Storage
Scoop ice cream onto half of the sandwich, and press another half on top. If you will be serving the sandwiches in the near future, simply place assembled sandwiches on a serving tray and store in the freezer until time to serve them. If you wish to store the sandwiches, it is best to wrap them individually with plastic wrap or in freezer bags.

- 1 can full fat coconut milk, healthy fats
- 1 Tablespoon apple cider vinegar
- 1 teaspoon vanilla extract, the good stuff

- 2 Tablespoons maple syrup
- 1 teaspoon vanilla extract, the good stuff
- 2 cups of frozen strawberries
Instructions
- Preheat oven to 350°.
- Line baking sheet with parchment paper.
- Mix coconut milk, apple cider vinegar, and vanilla extract in large bowl until combined well.
- Add Sweet Elizabeth's Organics Vanilla Cake Mix, and stir well.
- Drop 12 scoops of batter onto baking sheet to make individual sandwiches. You will need a top and a bottom for each of the six sandwiches.
- Bake at 350° for 10 minutes.
- Allow them to cool completely before assembly.
