Allergy-friendly breads are hard to find, especially ones that taste like bread should—slightly crusty on the outside and soft and chewy on the inside. The thought of making bread really freaks most people out with thoughts of “Are you kidding, bread baking is an art. I’m not an artist!” You are in luck! I have taken the challenge out and put the simplicity in!
My Bread Flour Mix is gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan and so versatile that you will want to have it on hand at all times. Who knows when the craving for cinnamon rolls or a pizza crust may pop up.
Let’s get down to it.
In addition to my Bread Flour Mix, all you need are 4 basic ingredients to make the best loaf of bread you have ever tasted.
Ingredients
Warm water
Coconut sugar
Aquafaba (water from a can of chickpeas)
Active, dry yeast
Instructions
Grease or line a large bread pan with parchment paper.
In a medium bowl, combine warm water, sugar, oil if using, and active dry yeast.
Allow mixture to sit for a few minutes until the yeast becomes active. You will see a few bubbles as it starts to work.
Stir in aquafaba.
Add in Bread Flour Mix until well combined.
Allow mixture to sit for 5 minutes while the flours absorb the liquid.
Stir the dough again.
Grease your hands well, and pour the dough onto a piece of parchment paper or a silicone mat.
Knead the dough for 30 seconds, and shape into a rectangle.
Roll it into a loaf shape and tuck the ends under.
Place the loaf in the bread pan and bake at 400° for 15 minutes.
After 15 minutes, rotate the pan in the oven, and bake for another 45 minutes or until there is a nice golden crust on the outside.
Take loaf out of the pan immediately upon removing it from the oven, and allow it to cool on a cooling rack.
