Easy, Gluten Free, Vegan Waffles

These waffles are crispy on the outside and light and fluffy with a hint of sweetness on the inside. No one will ever know they are gluten-free. Personalize them with fruit on top or add some chocolate chips to the batter. The possibilities are endless! My-easy-to-use, gluten-free, vegan, top 8 free (except coconut), Pancake & Waffle Mix allows you to make perfect waffles in no time, every time.

Texture matters when it comes to waffles. Some waffles are heavy and dense, not these pancakes with abs! These waffles are light and fluffy and make a quick and easy breakfast. You can always add fruit or chocolate chips to the batter to change things up a bit. If you really want to make things interesting, try savory waffles. Add onion, garlic, and a few choice spices. Have fun!

Remember, waffles aren’t just for breakfast. Waffles are great for lunch and dinner, too!

Making amazing gluten free, dairy-free, egg-free, peanut-free, tree-nut-free (except coconut), plant-based, vegan, waffles that taste great has never been so easy. I have taken the challenge out and put the simplicity in. Let’s get down to it…

Ingredients In addition to my Pancake & Waffle Mix, all you need are 4 basic ingredients.

  • 2 cups water, filtered is best

  • 1 Tablespoon apple cider vinegar

  • 1/4 cup unsweetened applesauce

  • 1 teaspoon vanilla extract

    *optional chocolate chips or fresh fruit pieces

  • Preheat a large electric skillet or waffle iron to medium heat.

  • In a large bowl, combine the water, vinegar, applesauce, and vanilla.

  • Stir in Pancake & Waffle Mix until well combined.

  • Allow the batter to rest for a few minutes while the flours absorb the liquid.

  • Grease your waffle iron before adding the batter to ensure your waffles don’t stick.

  • Scoop 1/2 cup of batter for each waffle.

  • Top with your favorite toppings: real maple syrup, fresh fruit, seed butter, or whatever your heart desires.
